Preparation Instructions

  • Organise Trays with Silicone Paper
  • Remove required number of products from Freezer
  • Products to be trayed up 4 x 6 for batched rolls
  • If topping, spray with water and roll in seeds or dust with flour
  • Once traying up complete, cover rack with cover and place in refrigeration overnight
    (Minimum 10 hours)
  • Rack to be removed from chiller, for 20 minutes then placed in Proofer.
    if no prover available, then leave out covered and let the product reach required size)
  • Prove for 45 mins at 36c and 85% humidity

Baking Instructions

  • Preheat Oven to 200c
  • Place product in the oven at 180c for 15-20 mins and apply steam for 6 – 8 secs.
  • Damper for last 3-5mins
